This is the most popular cheesecake in Poland.  Smooth, creamy and with some dried cranberries  taste just perfect. Very easy basic cheesecake recipe.

Ingredients:

  • 1kg cream cheese or curd cheese, minced 3 times,
  • 250g butter (softened to room temperature),
  • 1 cup powdered sugar (or healthy sugar substitute xylitol),
  • 1 teaspoon pure vanilla extract,
  • 6 eggs ( room temperature ),
  • half a cup of heavy cream,
  • 4  tablespoons potato starch,
  • 100g dried cranberries

Recipe:

  1. Mix together soft butter and sugar until moistened and starts to come together,
  2. Add the yolk one at a time, beating after each,
  3. Add the cream cheese, vanilla extract, heavy cream and potato starch, mix all ingredients together, at the end incorporate dried cranberries,
  4. In additional bowl beat egg whites until they are foamy,
  5. Gently mix together egg whites and cheesecake filling,
  6. Prepare the springform pan for baking. Line the bottom of the pan with parchment paper,
  7. Heat the oven to 170 degrees,
  8. Pour the batter into the springform pan, bake for about 60 minutes,
  9. When it is done turn the oven off and open the oven door, after full cooling decorate cheesecake with  powdered sugar.
