Oatmeal cookies with peanut butter

Oatmeal cookies with peanut butter are a really nice alternative for lunch at school or work . One of the main ingredients is peanut butter, which I love, but that is not the only one advantage of this cookies they are also ginger flavoured.
Ingredients:
- 2 cups of old-fashioned oats
- 4 tablespoons of oat bran
- 8 tablespoons of peanut butter
- 1 glass of milk
- 5 tablespoons of xylitol sugar (or white sugar)
- 1 tablespoon fresh grated ginger
- 2 teaspoons pure vanilla extract
- 100 g peanuts
- 200g dark chocolate for decoration
Recipe:
- Add the old-fashioned oats to a blender and grind them until the oats turn into a powder,
- In a large bowl mix together: oats powder, bran, sugar, peanut butter, milk, grated ginger and vanilla extract,
- Heat the oven to 180 degrees,
- Line a cookie sheet with parchment paper,
- Form the dough into balls and place the bals 2 cm aparat on a lined cookie sheet,
- Flatten the balls in crisscross pattern with a fork,
- Gently press peanuts into each cookie on the top,
- Bake for about 15 minutes,
- Let the cookies cool for a few minutes on the baking sheet before transferring to a cooling rack, decorate with melted chocolate.
